Run by the Matsuka family, Matsuka Seimen is the noodle factory that has been handmaking and selling fresh udon to eager crowds of locals outside of their unassuming building for over 13 years. It's the udon's thick texture and rich taste that keeps crowds of up to 200 coming back for more, but the factory also serves Japan's famous soba noodles too.
Hungry visitors can't just rock up to the factory at any time though. Matsuka Seimen noodles have become so in-demand that you'll have queue at the crack of dawn just for the chance to take some udon home with you. To be precise, lucky customers only get the opportunity to buy noodles from Matsuka Seimen between 6:00am and 7:00am each morning, so you better double check your alarm is set if you want to get a taste of Okayama's most sought-after delicacy.
